Chicken Tortilla Soup

Ingredients

    3 13 oz cans of canned chicken
    2 32 oz containers of chicken broth
    1 med. chopped onion
    8 oz chopped mushrooms
    1 T cumin
    2 limes
    1/3 cup chopped cilantro
    1 cup cheddar cheese
    1 avocado
    Tortilla chips

Directions

Chop onions and mushrooms and saute for 5 minutes. Add cumin and stir. Add chicken and broth. Bring to boil, reduce heat, and simmer for 10 minutes. Add juice of one lime to soup. Stir.

In each bowl crush 5-6 tortilla chips and add shredded cheese. Ladle soup into bowls, add cilantro, and avocado slices. Serve with lime wedges.
