Introduction

Ingredients

    3 Tablespoons Flax Seeds Ground but not pulverized

    1 Cup Blueberries (2 6 oz. containers will do nicely)

    1 C Whole Wheat Flour
    1 tsp Baking Powder
    1/2 tsp Baking Soda
    1/4 tsp Ground Cinnamon
    1 tsp Salt

    2 large eggs
    1/2 Cup Unsweetened Applesauce
    3/4 Cup Brown Sugar

Directions

Preheat oven to 375. Grind 3 cups of Total Whole grain Cereal in Coffee Grinder and set aside. Roughly grind flax seeds and put aside for topping. Grease 2 loaf pans or prepare muffing papers with non-stick spray. Sift Flour, Baking Powder, Baking soda, Cinnamon, Salt together. Add 3 Cups finely ground Total whole grain Cereal, and stir.In another small bowl soak Quick Oats in Low fat Buttermilk for 3 minutes to soften. I another bowl beat eggs with Brown Sugar, and Applesauce. After soaking time is up, Stir buttermilk oat mixture into dry ingredients. Do not overwork. Fold in Blueberries, divide mixture evenly into 2 loaf pans or muffin pans, Top with Flax seeds (stir top slightly with a fork to help flax seeds stick, and bake for 22-25 minutes.
