Broccoli and crab salad

Ingredients

    Broccoli, 1 bunch (approx 2 cups)
    Scallion, 1 large
    Red pepper, 1/2
    Imitation crab, 1 cup
    Low fat mayonnaise, 1 tablespoon
    Lemon juice, 1 tablespoon

    Cut the broccoli into bite-size pieces. You can leave it raw, or microwave it for 90 seconds to make it crisp-tender. Chop the scallions and red pepper. Chop or flake the imitation crab into a medium size bowl. Add one tablespoon of low-fat mayonnaise, and the lemon juice. Mix the crab, mayo and lemon juice until blended. Add the broccoli, scallions and red pepper, and toss to distribute the salad ingredients together. Salt and pepper to taste.

Tips

You can also make this salad with snap peas, chopped asparagus spears, cauliflower florets, or a combination of any of these. If you plan to pack it as a lunch or take to a potluck, layer the vegetables on top of the crab, and don't toss until ready to serve.
