Quinoa & Spinach Salad

Introduction

Great, light base salad for a main dish - gluten free! Great, light base salad for a main dish - gluten free!
Number of Servings: 4

Ingredients

    6 cups fresh spinach
    3/4 cup dry quinoa
    1 1/2 cups chicken broth
    1 large cucumber, unpeeled and sliced in quarters
    2 large scallions, finely sliced
    2 medium carrots, finely sliced
    4 tbsp light olive oil & balsamic vinaigrette dressing

Tips

* Swap out vegetable broth for chicken broth to make this dish vegan


Directions

Cook quinoa in chicken broth according to the package directions. Wash and spin dry spinach, chop vegetables and toss all toss all together in a large bowl with dressing. Serve immediately.
