Fried Rice

Number of Servings: 5

Ingredients

    1 cup Uncle Ben's Whole Grain Brown Rice - dry
    2 large eggs
    1 tbsp. olive oil
    1/2 cup onion, chopped
    1/2 cup carrots, chopped fine
    3 tbsp. soy sauce - low sodium
    1/2 cup sweet peas

Directions

Prepare rice according to package instructions. (yields about 4 cups of cooked rice)
In a skillet, scramble 2 eggs in olive oil. Add onion, carrots, soy sauce and peas. Stir fry until tender. Add cooked rice. Heat through.

Serving Size: makes 5 1-cup servings
