Chicken and Chickpea Tagine

Ingredients

    4 boneless, skinless chicken thighs
    medium onion, peeled and sliced into rings
    2 garlic cloves, chopped
    1 teaspoons lemon juice
    1 tablespoons extra virgin olive oil
    teaspoon smoked paprika
    teaspoon cumin
    teaspoon cinnamon
    teaspoon ginger
    teaspoon tumeric
    1/16 teaspoon cayenne pepper
    cup reduced sodium chicken broth
    cup green olives
    15 oz can chickpeas, rinsed and drained

Directions

Place thighs, onion and garlic in a large bowl. In
a small bowl, combine lemon juice, olive oil,
paprika, cumin, cinnamon, ginger, turmeric and
cayenne pepper to make a paste. Add spice
mixture to chicken thighs, onions and garlic,
and toss until evenly coated. Let stand 15
minutes. Transfer to a Dutch oven or pot with a
lid. Add chicken broth, and bring to a boil over
medium-high heat. Add green olives and
chickpeas. Lower heat to simmer. Cover and
cook 1 hours, or until chicken is done,
removing lid during last 10 minutes if cooking to
thicken sauce.
