Pumpkin Seed and Flax Granola

Introduction

A slightly sweet and crunchy treat to mix with yogurt and sprinkle on smoothies A slightly sweet and crunchy treat to mix with yogurt and sprinkle on smoothies
Number of Servings: 30

Ingredients

    8 cups Old Fashioned Oatmeal
    2 cups raw pumpkin seeds
    8 TBSP ground flax seed
    1/4 cup brown sugar, packed
    2T cinnamon
    1T salt

    1/2 cup canola oil
    1/2 c maple syrup
    1/2 cup molassas
    1T vanilla extract

Directions

Mix all dry ingredients together in a large bowl. Mix all wet ingredients in a different bowl. Combine stirring to coat all the dry ingredients. Spread on half sheet pan (or jellyroll pan/cookie sheet with sides) with a silpat or parchment paper liner. Press down with back of a spatula to compress. Bake for 30-40 minutes until slightly browned and crispy. Cool, break into chunks and store in an airtight container.
