Shredded Chicken and Cheese Stuffed Shells

Introduction

Cheesy and delicious with broccoli (for hidden vegetables) and shredded chicken (so my husband and kids will eat it). Cheesy and delicious with broccoli (for hidden vegetables) and shredded chicken (so my husband and kids will eat it).
Number of Servings: 3

Ingredients

    15 jumbo pasta shells
    3/4 cup nonfat cottage cheese
    1/2 cup reduced fat ricotta
    1/2 cup shredded mozzarella
    1/2 cup chopped broccoli
    1 full chicken breast

Directions

Cook and shred the chicken breast, set aside.
Cook pasta until just al dente- DO NOT OVERCOOK. Soggy shells are hard to stuff.

Mix cottage cheese and ricotta, add in shredded chicken and chopped broccoli.

Stuff the shells with the mixture and place them on a baking sheet. Top with mozzarella.

Bake for 10-15 minutes at 350* or until mozzarella is lightly browned.

Serving Size: 2 servings of 3 shells
