Esther's Raw Salad

Ingredients

    I Head Romaine Lettuce (shredded)
    2 Medium or 1 large Beet (grated)
    2 Large Carrots (grated)
    1 Medium Cucumber (chopped)
    1 Yellow Bell Pepper (chopped)
    1 Green Bell Pepper (chopped)
    1 Red or Orange Bell Pepper (chopped)
    1 Large Onion (finely chopped)
    1 Medium Zuccini (grated)

Tips

Salad keeps for a week. I chop and add an apple to it when eating as I don't like the apples to get brown.


Directions

1. Combine all ingredients in a large bowl.
2. Mix and refrigerate and eat as desired

Serving Size: 1 Serving equals a medium bowl full
