Southwestern Omlete

Ingredients

    2Lg. Egg whites
    1/4C Canned Black beans, rinsed and drained
    1 TBSP chopped Onions
    2 TBSP Weight Watcher's Shredded Mexican Cheese
    2 TBSP Salsa

Directions

Beat the egg whites

Mix together beans, onion, cheese and salsa.

Pour egg into a sprayed, non-stick skillet. Cook over med. heat. Let egg set slightly. Tilt pan and allow uncooked portion to flow underneath to cook. Cook about 2-3 minutes then flip. Place bean mixture onto half the egg and flip the empty side over the bean mixture. Cook about 1 minute until cheese melts.

Slide onto plate and enjoy!
