Twice-Baked Potato Boats

Ingredients

    5 large russet potatoes
    2 scallions, diced
    aluminum foil
    1 tbsp vegetable oil
    1 tbsp 2% milk
    2 tbsp ranch dressing
    1 tsp dijon mustard
    1 cup cheese (any kind), shredded
    2 tbsp unsalted butter, softened
    2 cloves garlic, minced
    Salt & pepper to taste
    1 tsp oregano

Tips

A great sour cream (like Daisy) goes amazing as well.


Directions

Preheat oven to 350 degrees. Wrap each potato individually in foil. Place in a shallow baking dish, about 1-2 inches apart, bake for 1 hour and 15 minutes. Once potatoes are done, scoop out insides until skins are about 1/4 inch thick. Combine all spices, potato insides, milk, ranch, mustard, and butter into a large mixing bowl. Thoroughly combine, then scoop back into each potato "boat". Cover each boat with cheese, then place back into the oven and cook for another 30 minutes. Let cool for 5 minutes, then serve with chopped scallions on top.
