Chili-Lime Chickpea Salad

Introduction

High Fiber Healthy lunch of side dish. High Fiber Healthy lunch of side dish.
Number of Servings: 4

Ingredients

    1 Can Chickpeas or Garbanzo beans
    1/2 small Avocado chopped
    1/4 onion chopped
    1/2 jalapeno chopped
    1/2 bunch cilantro chopped
    1 garlic clove minced
    1 TBLS EVOO
    1 tsp cumin
    1/2 tsp salt
    1/2 tsp pepper
    1 lime juiced
    a tiny bit of Stevie extract.

Directions

Drain and rinse Garbanzo beans. Combine in a bowl with Avocado, onion, jalapeno, and cilantro. For the Dressing: Combine rest of ingredients in a bowl and whisk to combine. Dress the salad with the dressing. Let marinate for a while to combine flavors.

Serving Size: Makes 4-4oz or half cup servings
