Spanish marinated chicken

Introduction

Tasty marinated chicken suitable for skewers on the grill or stir-fried on a plate! The fat level is a little high if you eat the marinade, but it's mostly olive oil ("healthy" fat) Be sure to plan time for marinating! Ingredients

    1/4 c olive oil
    1 Tbsp lemon juice
    2 Tbsp dried parsley
    1 tsp dried thyme
    1 Tsp paprika
    1/2 tsp salt (not in nutritional data)
    1/4 tsp ground pepper
    1-1/2 lb skinless boneless chicken thighs

Tips

My family loves this as written. However, I like it a bit tangier, so I double the lemon juice and add about a half teaspoon of lemon zest. Yum!


Directions

mix all ingredients except chicken in a container suitable for marinating (I use a zip-lock freezer bag). If grilling on wooden skewers, soak skewers in water at least a half hour to prevent burning (longer is fine)

Cut chicken into 1.5-inch pieces for skewering, or smaller (your preference) for stir-frying. Add chicken to marinade, toss/mix well, and refrigerate at least two hours.

For grilling:
Drain marinade into small saucepan, heat to boiling and boil for 3 minutes. Thread chicken pieces onto metal or soaked wooden skewers and grill. BOILED marinade can be used for basting or served over chicken and/or sides.

OR:toss in a hot skillet with the marinade until thoroughly cooked.
