Quinoa and ground beef

Introduction

Just using up some veggies Just using up some veggies
Number of Servings: 1

Ingredients

    1 cup quinoa
    1 lb extra lean ground beef
    2 cups diced carrots
    2 cups raw peppers, diced
    1 cup zuchini
    garlic to taste
    extra virgin olive oil

Directions

Make the quinoa as directed and set aside
brown the ground beef, drain fat and mix in veggies
saute until done, mix in with quinoa

Serving Size: makes 8 1 cup servings
