Oatmeal Pancakes - Laurel's Kitchen

Introduction

I sometimes add a small can or creamed corn to this recipe to make corn fritters - yum! I sometimes add a small can or creamed corn to this recipe to make corn fritters - yum!
Number of Servings: 10

Ingredients

    Skim Milk, 1 1/8 c. (9 oz.)
    Rolled Oats (Old Fashioned), 1 c (80 grams))
    Canola Oil, 2 tbsp
    Eggs, 2 large, beaten
    Whole Wheat Flour, 0.5 cup
    Brown Sugar, 1 Tbsp.
    Baking Powder, 1 tsp
    Salt, 1/4 tsp.

Directions

Combine milk and oats - let stand for at least 5 minutes.
Add Oil and beaten eggs, mixing well.
Stir in dry ingredients, mixing only until moistened.

Bake on hot, lightly oiled griddle (1/4 c. per pancake).
Turn when top is bubbly and edges are slightly dry.

Serving Size: Makes 10 4-inch pancakes
