Ever so easy Chicken Salad

Introduction

Ingredients

    1 onion
    2 bay leaves
    1 1/4 t salt, divided
    4 chicken breasts
    1 1/2 T mayo
    1 T dijon or stone ground mustard
    2 stalks celery, chopped

Directions

Makes six generous servings. This is great on toast for a sandwich, on lettuce, etc

Poach the chicken breasts: Bring a pot of water to a boil with a quartered onion (skin removed), 1 t salt and 2 bay leaves. Add the chicken once the water is boiling, then lower temp to a simmer.

Simmer chicken, covered, for 20 minutes.

Remove chicken one breast at a time and shred/cut into bite sized pieces and place into a mixing bowl. After the first two breasts are in the bowl, add the celery, mayo, and mustard and stir.

Cut the rest of chicken and place in bowl, stirring after each addition. Adding the mayo and mustard while still hot means the chicken absorbs more into the chicken and the celery softens a bit, boosting the flavor.

Serve hot or chill and serve up to 2 days later. Yum!
