Mom's Potato Salad

Ingredients

    4 xtra lrg baking potatoes, boiled till fork tender, skins removed, cubed
    2 lrg hard boiled eggs, finely chopped
    1 lrg stalk of celery, finely chopped
    1/2 cup chopped fine, green pepper
    1/2 medium red onion, chopped fine
    2/3 cup sweet pickle relish
    1/2 tbsp sugar
    1 tsp each, salt, black pepper, celery seed
    1 Tbsp yellow mustard
    1 to 1 1/2 cups Light Mayonnaise

Directions

combine all vegetables and eggs, add seasonings and mustard and mayo. fold to combine. refrigerate 4 to 5 hours or over night.
