Hearth-Healthy Summer Rice Bowl

Introduction

Number of Servings: 4

Ingredients

    2 cups reduced-sodium chicken broth
    1 cup long-grain brown rice
    1/2 cup zucchini, shredded
    1/2 cup carrots, shredded
    3 T unsalted sunflower seeds
    3 T slivered almonds
    2 T parsley
    1 tsp olive oil
    1/4 tsp red pepper flakes

Directions

1. Pour rice and chicken broth into a large saucepan and bring to a boil.
2. Once boiling, cover and reduce heat. Cook for 50 minutes, or until the rice is fully cooked. Remove from heat and let the rice sit for about 10 minutes.
3. Meanwhile, heat the olive oil in a medium skillet over medium-high heat. Add carrots and zucchini; cook for 2 minutes.
4. Next, add the sunflower seeds, slivered almonds and red pepper flakes. Continue to cook until the almonds begin to brown.
5. vegetable mixture to the rice. Sprinkle parsley on top and stir until combined.
6. Serve hot or cold.
