-1.5 cups Quinoa dry
-2 cans Black Beans
-one container fresh spinach- can use frozen-if thawed
1 tablespoon butter
one 8oz package of 50% light cheddar
Seasonings of your choosing (we used adobo and garlic salt and pepper)
Prepare 1.5 dry cups of quinoa according to package directions (1:2 ratio w/ water)
Sautee spinach in .5 of the tablespoon of butter
Mix cooked quinoa, spinich, rinsed black beans, and 1/2 the package of cheese.
Add seasoning to taste (we used adobo and garlic salt)
greese casserol dish with other half of tablespoon of butter
Place in large casserol dish and spread the rest of the cheese on top.
Bake for 20 or so minutes
Allow to cool for at least 5 minutes before serving.
Makes about 12 3by3 square portions
