Spinach Lasagne

Introduction

Vegetarian lasagna with spinach and mushrooms. Vegetarian lasagna with spinach and mushrooms.
Number of Servings: 16

Ingredients

    1 lb. lasagna noodles
    2 jars pasta sauce
    1/2 lb. shredded mozzarella
    1/2 lb. grated parmesan
    1 lb. ricotta cheese
    ½ lb. spinach (or thaw and drain frozen)
    ½ lb. mushrooms

Directions

Grate parmesan cheese.
Shred mozzarella cheese.
Boil lasagna noodles for 8 minutes.
Cook mushrooms in a skillet.
Add the spinach to thaw. Drain.
Preheat oven to 425a.
Set aside 1 1/2 cup of the spaghetti sauce.
In a large bowl, mix ricotta cheese and remaining spaghetti sauce.
In a medium bowl, mix the parmesan and mozzarella cheeses.
Take out one cup of cheese mixture and set it aside.
Mix the rest into the spaghetti sauce.
Mix the spinach and mushrooms into the spaghetti sauce.
Coat the bottom of the glass baking dish with 1/2 c. spaghetti sauce.
Lay 4 noodles lengthwise across the bottom of the dish.
Lay 4 noodles crosswise across the first layer of noodles.
Cover noodles with spaghetti sauce.
Lay 4 noodles lengthwise.
Lay 4 noodles crosswise.
Cover with spaghetti sauce.
Cover with noodles.
Cover with sauce.
Sprinkle the cup of cheese on top.
Bake for 45 minutes or until golden brown.
