Taco Soup

Ingredients

    2 pounds lean hamburger meat
    1 can chickpeas
    1 can pinto beans
    1 can corn
    1 can Ro-Tel
    1 envelope dry ranch dressing mix
    1 envelope taco seasoning
    Optional:
    Tostitos crispy rounds
    Fat free sour cream
    2% Kraft Mexican blend cheese

Directions

Brown the hamburger meat and drain off the fat. Pour the beans, chickpeas, corn, rotel, ranch mix and taco seasoning in with the meat and stir. Simmer over medium heat for 30 minutes. Serve with optional Tostito chips, fat free sour cream and low fat shredded cheese. Serve 15.

  • You can buy soy hamburger already seasoned for taco's to cut down on the sodium. Also there are salsa's with most of these ingredients in it which are low sodium. - 4/16/07
