GREEK - Imam Baildi

Introduction

Oven-roasted eggplant in tomato sauce Oven-roasted eggplant in tomato sauce
Number of Servings: 4

Ingredients

    2 medium eggplants
    1 large onion
    3 tbsp olive oil
    1 cup diced tomatoes
    1 cup tomato sauce
    1 tbsp sugar
    1/2 c water

Directions

1) Saute onion with 1 tsp olive oil and caramelize with sugar
2) Chop eggplants in 3/4" cubes and place in pyrex baking dish
3) Drizzle caramelized onions on top of the eggplant along with remaining oil
4) Pour both chopped tomatoes and tomato sauce over the dish
5) Add 1/2 cup of water
6) Cover with foil
7) Bake covered in 375 F for 30 minutes, then remove foil stir and bake covered for another 30 minutes or until eggplant is soft
