Ingredients

    6 medium potatoes
    1.5 cups fat free plain yogurt
    1 Tbls mustard
    .5 tsp salt
    .25 tsp black pepper
    1 cup finely chopped celery (2 stalks)
    .5 cup sweet dill relish
    6 hard cooked eggs, chopped
    paprika (optional)

Directions

Boil potatoes whole for 20 to 25 minutes. Cook eggs and peal and chop. Peal and cut potatoes into cubes. Mix yogurt, mustard, salt, and black pepper. lightly toss potatoes, yogurt mixture, celery, eggs and relish. You may add paprika if you like. Chill for 6 to 24 hours.
