Introduction

Number of Servings: 4

Ingredients

    4 Eggs
    Almond Breeze Almond Milk, Unsweetened Original, 3 oz
    *Tomatoes, red, ripe, raw, year round average, 2 plum tomato
    Shiitake Mushrooms, 2 mushrooms
    Summer squash, 1 cup, chopped
    Turmeric, ground, 2 tsp
    Spinach, fresh, 1 cup

Directions

Chopped vegetable to your preferred size
Beat eggs with almond milk and season
Preheat oven 400 and switch to boiler when omelette is placed inside oven.
Heat skillet with olive oil. Add turmeric, stir, add squash cook one minute, add tomatoes, cook three minutes, add mushrooms and spinach, cook one minute.
Stir lightly helping to form shape and remove liquid.
Place skillet in 400 boiler for 10 minutes to finishing cooking.
Serve and enjoy
