Biscuit topping for stew

Introduction

Ingredients

    Flour 1/2 cup
    Baking powder 1 tsp
    Grated cheese 1/4 cup
    Paprika, mustard etc. Dash (optional)
    Olive oil 1 tsp
    Milk 3 tbsp
    Egg whites 1 tbsp


Tips

I use 4" diameter oven-proof cups, one per person, half filled with stew, and a 4" cookie cutter.


Directions

Preheat oven to 350.
Mix dry ingredients and cheese. Mix egg white and milk together, add the oil. Pour wet ingredients into dry, mix just until it clumps together. Turn out onto floured surface, knead very lightly, and press with hands to about 1/2" thick. Fold once and flatten again with hands. Cut with cookie cutter or knife.

Either use to top hot stew in oven-proof cups, or place on parchment-lined baking tray. Bake at 350 for 15-20 minutes.


Serving Size: Makes topping for 2 portions of stew, or 4-6 scones.
