Number of Servings: 8

Ingredients

    2 1/2 tablespoons olive oil
    1 large onion, diced
    2 cups diced carrots
    2 cups diced celery
    1 pound 93% lean ground turkey
    ˝ teaspoon celtic sea salt
    1 teaspoon black pepper
    ˝ teaspoon smoked paprika
    1 cup chicken broth
    34 oz cauliflower, trimmed, chopped and steamed until very soft
    3 cups large diced turnips, peeled and steamed until soft
    1 Cup chopped kale (packed)
    1 TB coconut flour
    2 TB organic tomato paste
    garlic powder (to taste)

Directions

Heat olive oil in a very large frying pan
Saute onion for 15 minutes until soft
Add carrots and celery to pan and sauté for 10 minutes until soft
Add ground turkey to pan and sauté until brown, just a few minutes
Season with salt, pepper and smoked paprika
add tomato paste and coconut flour
Add chicken broth and cook down broth until 60% evaporated
stir in kale
Place cauliflower and turnips and garlic powder in food processor or vitamix and puree until smooth
Pour ground turkey mixture into a 9 x 13 inch baking dish
Pour mashed cauliflower and turnips over turkey mixture
Bake at 350° for 30 minutes
(optional) sprinkle with diced parsley
