Spinach, Cheese, & Ham Stuffed Chicken Breast

Spinach, Cheese, & Ham Stuffed Chicken Breast

Introduction

Delicious, Low Carb!!! Delicious, Low Carb!!!
Number of Servings: 4

Ingredients

    4 boneless skinless chicken breasts (4oz each)
    4 slices low sodium ham (1oz each)
    4 slices Fat Free Mozzarella cheese (1oz each)
    1 C baby spinach leaves, chopped
    4 TBSP all purpose flour, divided
    1 TBSP extra virgin olive oil
    1TBSP I Can't Believe It's Not Butter Spread
    1C Swanson 99% FF chicken broth
    1 TBSP Half-n-Half
    Salt & Pepper to taste

Directions

Preheat oven to 350 F.
Cut each breast horizontally almost to the opposite edge. Fold back top half of breast. Sprinkle lightly with salt & pepper. Place 1 slice of ham, 1 slice of mozzarella, & 1/4 cup spinach on each check breast. Fold top half of breasts over filling.
Spread 3 tablespoons flour on a plate. Holding chicken breasts closed, coat in flour & shake off the excess. Lightly sprinkle chicken with salt & pepper.
Heat oil & margarine spread in large skillet over medium heat. Place chicken in skillet & cook about 4 minutes on each side or until browned.

Transfer chicken to shallow baking dish. Bake in oven 10 minutes or unitl chicken is no longer pink and juices run clear.
Whisk chickn broth and cream into remaining 1 TBSP flour in a small bowl. Pour broth mixture into the skillet you browned the chicken in. Heat over medium heat, stirring constantly, until sauce thickens... about 3 minutes.

Transfer chicken breast to 4 plates and spoon the sauce over the top.

Makes 4 servings.

    This was an absolute tasty recipe. I don't like ham so I used bacon instead and mixed both mozz cheese and cheddar and sauted the spinach with some garlic and it was super delish.... Will definitely make this again - 5/24/09

    this seems like a healthy spin on the cordon blue! can't wait to make it

    I made this and turn out quite yummy! though on the sauce I didn't have half and half or chicken broth :P so instead I used milk and chicken broth cubes and added some herbs and turned out great!!! and still kept the cals lo - 3/10/08

    I made this with Herb Ox sodium free boullion and low fat milk, added some garlic powder to the sauce. The family liked it and I will definately be making it again. Thanks - 2/18/09

  • This was very good. My husband wanted stuffed chicken and I found this easy recipe that had the items I had on hand. I added some white wine and garlic salt to the sauce. I sliced the chicken lengthwise in half and pounded it , added fillers and rolled the breasts. - 9/3/14

  • This is definitely a keeper...easy to make and delicious. I don't like to alter recipes the first time I try them, but I was missing some ingredients. I had no ham, so I just left it out and had no mozzarella, so I used provolone. Didn't make sauce. It was moist and tasty without it. - 5/23/14

  • I substitute a few things to accommodate what was in my kitchen. i.e. can milk 4 1/2n1/2, low sodium chicken bouillon 4 Swason, string mozzarella pepper jack cheese & I like spicy so I added some Cajun seasoning instead of Sal & Pepper. It was absolutely delicious. My Hubby kept u just made 2. lol - 7/14/13

  • I remade this recipe with only 1TBL of olive oil, eliminated the margarine (transfats) and using laughing cow creamy swiss wedges, using turkey bacon instead of the ham. Lowered calories to 243 and carbs to 3.9 Can't wait to get home and make it tonight. Think I'll add minced garlic and taragon. - 2/10/12
