Shrimp, Mushroom and Feta Penne

Introduction

Number of Servings: 4

Ingredients

    12oz Cooked Shrimp
    2 Tbsp Fresh Basil
    2 cups sliced Mushrooms
    2oz reduced fat Feta Cheese (crumbled)
    2 cups chopped tomatoes (or one 14.5 oz can, nutrition calculated with fresh)

    4 Servings (about 8oz dry) Whole grain Penne pasta.

Directions

Thaw the shrimp if using frozen, and remove tails.
Cook the pasta according to package directions.
While pasta is cooking saute mushrooms in a large skillet on medium high heat approximately 5 minutes. Add tomatoes, basil and shrimp to skillet, and cook 5 more minutes, stirring occasionally. Add Drained pasta to skillet, toss with feta cheese and another minute or until cheese begins to melt.

Serving Size: makes 4 about 1.5 cup servings
