Blueberry Applesauce Muffins with Protien Powder

Introduction

Moist and yummy muffins with lots of protein! Moist and yummy muffins with lots of protein!
Number of Servings: 12

Ingredients

    1 C non-fat milk (or milk of your choice)
    1 t apple cider vinegar
    1 c whole wheat flour
    1/2 c protein powder
    1/2 t baking soda
    2 t baking powder
    1 t ground ginger
    1 t pure vanilla extract
    1/3 unsweetened applesauce
    1 1/2 cups partially frozen blueberries

Directions

Preheat oven to 375 degrees F.
Combine milk and vinegar in measuring cur, stir and set aside.
Partially defrost blueberries (I defrosted in mcrowave defrost cycle for 1 minute)
Add dry ingredients in mixing bowl. Mix and then create a well in the center.
Add wet ingredients (no berries) and stir until just combined (do NOT stir too long).
Add paper cups to muffin tin or spray liberally with non-stick spray (I think paper cups keep them much more moist).
Fill each tin about 2/3 full.
Bake 22 - 25 minutes (until toothpick inserted in the middle comes out clean)
Allow them to COOL before serving.
Freeze or refrigerate left overs (covered). Will last in the refrigerator for up to a week.
