Mocha Chocolate Chip Banana Muffins

Introduction

This is a very yummy recipe that I converted to low fat that I found on another website. These muffins are so moist that you don't even miss the fat. Add I was able to cut the calories from 267 down to 198.3, and fat from 13.3 to 5.3!!! Major win at my house!!! Ingredients

    1 C Unsweetened Applesauce
    3/4 C Splenda Brown Sugar Blend
    1/2 C White Sugar
    4 Ripe Small Bananas
    1.5 TBLS Instant Coffee Granules, dissolved in 1.5 TBLS Water
    1 tsp Vanilla Extract
    1 C Whole Wheat Flour
    1 1/4 C White Flour
    1/4 tsp Salt
    1 tsp Baking Powder
    1 tsp Baking soda
    1/4 C Ground Flax Seed Meal
    10 oz pkg Dark Chocolate Morsels

Directions

1. Preheat oven to 350 degrees
2. Blend applesauce,sugar egg, bananas, dissolved coffee in water, and vanilla in processor for 2 mins. Add flour mixture, salt, baking powder, soda, and ground flax seed and blend until flour disappears. Add chocolate chips and mix in by hand. Measure 1/4C in to each Pam sprayed muffin cup. 18-20 total.
3. Bake 18-25 mins. Check at 15 mins. Toothpick should come out clean. Add 5 additional mins at a time until done.
4. Should result into a moist dense muffin.
