Pumpkin Seed Crusted Chicken

Introduction

I thought I would be making this only for myself, but my boys say that they like it as much as fried chicken, so I have to make larger and larger batches. Number of Servings: 4

Ingredients

    8 2 oz. chicken breast tenders
    1 cup pumpkin seeds
    1/2 tsp. of each; salt, garlic powder, and onion powder
    small pinch of ground sage
    small pinch of black pepper
    1 egg beaten

Directions

Heat oven to 350 degrees and spray a cookie sheet with light cooking spray. Pat chicken dry and set aside. In a dry hot pan, toast the pumpkin seeds lightly a minute or two, stirring constantly. Remove from heat and cool a minute or two. Grind the seeds in the food processor along with the salt, garlic powder, and onion powder, small pinch of ground sage, and small pinch of black pepper. Dip the chicken tenders into the beaten egg and coat with the seasoned, crushed seeds. Place on oiled cookie sheet about an inch apart from each other. Bake 20 to 30 minutes or until the sheen of the seed-crust turns from a glossy look to a dull look. Remove from pan immediately and serve.
