Number of Servings: 36

Ingredients

    1 egg white
    1/4 c. sugar
    2 tsp. water
    pinch salt
    1/2 tsp. coconut extract
    1 1/3 c. sweetened coconut flakes

Directions

Combine 1 egg white, 1/4 c. sugar, 2 t. water and a pinch of salt in a double broiler set over simmering water. Cook, whisking constantly, until mixture is foamy and hits 160 degrees on an instant read thermometer. Remove top of double broiler and beat w an electric mixer until stiff peaks form. Beat in 1/2 t. coconut extract. Spread in a thin layer over cupcakes and top w 1 1/3 c. sweetened coconut flakes.

Serving Size: makes enough to lightly frost 36 cupcakes
