Vanilla Coconut cupcakes

Ingredients

    2 c. white flour
    1 1/2 t. baking powder
    1/4 t. salt
    10 T. (1 1/4 sticks) unsalted butter, softened
    1 c. sugar
    3 large egg whites
    1 t. vanilla extract
    1/2 c. finely chopped sweetened coconut
    1/2 t. coconut extract

Directions

preheat oven to 325 degrees. place paper liners in cups of MINI MUFFIN pans (36 total).
In small bowl, whisk together flour, baking powder and salt. In a lg. bowl, beat butter until smooth. Add sugar and beat until fluffy, about 2 minutes. Add egg whites , one at a time, beating well after each. Beat in vanilla. On low, beat in 1/2 the flour mixture, then 3/4 c. water. Beat in remaining flour mixture. Fold in chopped coconut and coconut extract. Divide batter evenly among prepared cups. Bake for 18 minutes.
