Beet Salad with Fruit

Ingredients

    Beets (4 medium)
    Apple (1)
    Oranges (2 medium)
    Mint, Fresh (2T)
    Oil (2T)
    Vinegar (1T)

Tips

Tastes great cold.


Directions

Wash and trim beets. Place in pan and add 1/2-inch of water. Bake at 375 for 1 hour.

Cool beets, then peel and cut into bite-sized pieces. Mix beets with diced apples and oranges.

Mix oil, vinegar, and mint. Add salt & pepper if desired. Pour over salad and mix. Serve over lettuce or spinach.

Serving Size: Makes 4 1-cup servings
