Joy Bauer's Life Diet Soup - Creole

Introduction

In Joy Bauer's Life Diet, if you don't have a salad with dinner, you should have 2 cups of this soup in one of its herb-spice variations. Original recipe called for "mushrooms", I like to use Baby Bella mushrooms for additional flavor. This is very bland, but it is a satisfying zero-point snack. Ingredients

    4 garlic cloves, minced
    1 onion, diced (1 cup)
    3 stalks of celery, chopped
    8 ounces Portabella mushrooms, sliced
    8 cups reduced-sodium chicken broth OR 8 cups vegetable broth
    3 carrots, sliced (about 1 cup)
    1 zucchini, diced (2 cups)
    1 cup fresh green beans, chopped
    3 cups cabbage (less than 1/2 cabbage head)
    15 ounces canned diced tomatoes
    3 bay leaves
    2 teaspoons dried basil
    1 teaspoon dried oregano
    1 tablespoon paprika
    1 teaspoon black pepper
    1/4 teaspoon cayenne pepper
    1/2 teaspoon thyme
    2 tablespoons red wine vinegar OR 2 tablespoons balsamic vinegar

Tips

1/2 cabbage head yielded 5 cups of roughly chopped cabbage and I ended up with 14 cups of soup.


Directions

Coat a large stock pot with non-stick cooking spray. Over medium heat, sauté the garlic, onion, celery and mushrooms for 10 minutes, or until tender.

Add the broth, remaining vegetables, canned tomatoes, and bay leaves. Add the dry herbs and spices. Bring to a boil, cover, and simmer over low heat for 20 minutes.

Add the vinegar and cook an additional 2 minutes. Remove bay leaves before serving or freezing.

Serving Size: makes 6 2-cup servings
