Blueberry oatmeal muffins

Number of Servings: 12

Ingredients

    Skim milk 1 1/2 cups
    Lemon juice 1 tsp
    Oat bran+ oats 1 1/2 cups

    Bread flour 1 1/4 cups
    Baking powder 1 tsp
    Baking soda 1 tsp


    Egg whites 1/4 cup
    Butter 1/2 stick (1/4 cup)
    Sweetzfree 15 drops
    Vanilla 1 tsp

    Blueberries, frozen 1 cup

Directions

Prepare muffin cups. Add lemon juice to milk and stir well.Add milk to oat bran, stir and let stand. In a large bowl, combine dry ingredients; set aside. (Can leave overnight at this stage).

Preheat oven to 375. Melt butter. In mixer or by hand, beat eggwhites, then add butter, Sweetzfree and vanilla and beat on low. Add milk-bran mixture to liquids and stir well on low. Add to dry ingredients all at once and stir with spoon until just combined. Gently stir in blueberries, still frozen.
Spoon batter into prepared muffin cups. Bake 20-25 minutes, until tops are golden.

Serving Size: Makes 12 muffins
