Blueberry oatmeal muffins

Number of Servings: 12

Ingredients

    Skim milk 1 1/2 cups
    Oat bran 1 1/2 cups

    Bread flour 1 1/4 cups
    Baking powder 1 tsp
    {Baking soda no Na 3 tsp
    OR
    Baking soda regular 1 tsp}
    Buttermilk powder 6 tbsp

    Egg whites 1/4 cup
    Almond oil 1/3 cup
    Sweetzfree 13 drops
    Vanilla 1 tsp

    Blueberries 1 cup

Directions

Preheat oven to 375 degrees F. Prepare muffin cups.
Add milk to oat bran and let stand. Combine dry ingredients; set aside. In mixer or by hand, beat eggwhites, then add oil, Sweetzfree and vanilla and beat on low. Add milk-bran mixture to liquids and stir well on low. Add dry ingredients all at once and stir with spoon until just combined. Gently stir in blueberries.
Spoon batter into prepared muffin cups. Bake 20-25 minutes, until tops are golden.
