Ingredients

    1/4 cup flax seed meal (ground flax) (4 tbsp)
    1 large egg, fresh
    1 tsp coconut oil
    1 tsp honey
    2 tsp ground cinnamon
    1 tsp baking powder

    Optional: hemp seeds, pumpkin seeds, chocolate chips, fruit to taste.

Not for those looking for low fat options!


Directions

Put the dry ingredients into a microwaveable mug and combine with a fork. Mix in oil and egg. Stir in any extra mix-ins. Microwave on high for about one minute or until cooked through and no longer sticky on the top.

Serving Size: Makes 1 muffin.
