Mushroom risotto - contented pg 74

Ingredients

    Chicken stock, home-prepared, 1.5 cup(remove)
    Olive Oil, .5 1tsp(remove)
    Onions, raw, .5 medium (2-1/2" dia)(remove)
    Garlic, 1 tsp(remove)
    Mushrooms, fresh, 250 grams(remove)
    Riso - Arborio - Risotto Rice, 50 gram(s)(remove)
    Perfect Italiano - Parmesan cheese, 10 gram(s)(remove)

Tips

Experiment with different stock i.e. vegetable, beef.


Directions

Place the stock in a saucapn over a medium heat.
Bring to the boil.
Reduce heat to low and cover, keeping a simmer.
Meanwhile, heat the oil in a large saucepan over medium heat.
Add the onion.
Cook, stirring for 5 mins or until softened.
Add the garlic and mushrooms.
Cook for 4 mins or until mushrooms are tender.
Add the rice.
Cook stirring for 1 min or until the rice is well coated in oil.
Add the hot stock to the rice, ladle 1/4C at a time, stirring continuously until all the liquid is absorbed. (this should take about 20 mins - the rice should be tender but firm and risotto creamy.)
