Frosted Cauliflower with horseradish

Submitted by: WHITNEYTEACHER

Introduction

This recipe is always a favorite at our house. I have taken it on potlucks and received requests to please make it again at future events. I modified the original by using olive oil mayonnaise, 2% cheese and adding horseradish. You can adjust the mustard and horseradish amounts to taste without changing the calorie count much. Ingredients

    Cauliflower, 1 large head
Best Food Mayonnaise w/Olive Oil, 3/4 cup
    1 Tbsp. yellow mustard
    2 tsp. cream style horseradish
Kraft Shredded 2% Cheddar Cheese, 1/3 cup

Tips

I have also made this recipe for a potluck and cut the cauliflower into chunks before cooking and then frosting all the chunks in the baking dish before baking. If you do it this way be very careful not to overcook the cauliflower, smaller pieces cook much quicker than the entire head.

Directions

Preheat oven to 425 degrees

Trim leaves and cut back stem of cauliflower and boil or steam the entire head without cutting, 12 minutes or until slightly soft.

While the cauliflower is cooking mix the mayonnaise, mustard and horseradish and set aside

Drain the cauliflower and set upright in a baking dish

Using the back of a large spoon or a rubber spatula "frost" the cauliflower with the mayonnaise mixture.
Be sure to cover the sides all the way to the bottom.

Cover with shredded cheese.

Put in preheated oven until cheese has started to bubble and brown slightly - approx. 5 minutes. Check it often, you don't want to burn the cheese.

Remove from oven and cut into wedges.

Serving Size: 8 servings - cauliflower is cut into wedges when ready to serve
