Apricot Almond Energy Bars

Introduction

Saw a bunch of different recipes for energy bars made at home with pretty common ingredients, so I decided to make up some of my own. Saw a bunch of different recipes for energy bars made at home with pretty common ingredients, so I decided to make up some of my own.
Number of Servings: 6

Ingredients

    1/2 cup dry roasted almonds (salted)
    1/4 cup raw almonds
    1/2 cup whole dates, chopped
    1/4 cup old-fashioned oats (toasted)
    1/2 cup dried apricots, chopped
    1/4 cup mini tollhouse morsels (or ~41g. semisweet chocolate)


Tips

I added my toasted oats while still warm which I think helped to melt the morsels a little, but the heat from the food processor is probably enough to do the trick.


Directions

Throw all ingredients into food processor and process until a ball will form and stick together. Then press into the bottom of a plastic-wrap/parchment-lined loaf pan. Chill until solid enough to remove from the pan in one piece and cut into 6 bars. Wrap individually and refrigerate until ready to eat. Enjoy. :-)

Serving Size: Makes 6 - 1.75oz. bars
