Brigitte's High Protein/Low Carb Eggplant Lasagna

Submitted by: BBELLANDE

Introduction

This is not a low calorie dish! My focus was to make a tasty Italian dish with as much protein as I could and still maintain a somewhat low carb count. I make it and freeze portions for later. I hope you enjoy it as much as I have. This is not a low calorie dish! My focus was to make a tasty Italian dish with as much protein as I could and still maintain a somewhat low carb count. Ingredients

    Ground beef, 2 lbs
    Salt, 2 tsp (to taste)
Pepper, black, 1 tsp (to taste)
    Garlic, 2 tsp

Eggplant 2 lbs slice into 1/4 - 1/2 inch slices
    Olive Oil, 2 tbsp

Trader Joe's Tomato Basil Marinara, 2 cups
    *Fennel seed, 1 tsp
Cloves, ground, 1 tsp (to taste)

    Cottage Cheese, Nonfat, 2 cups
    Mozerella Cheese Shredded, 2 cups
    Parmesan Cheese, grated, 2 oz

Tips

Season the sauce to taste. May add crushed red pepper for that extra kick. Adjust ingredients to suit your particular needs.

Directions

Brown ground beef in a pan with seasonings and drain excess oil. Add marinara sauce, ground clove, and let simmer while you brown eggplant.

Preheat the oven or toaster oven to 450 degrees F. Brush both sides of the eggplant with the garlic oil. Arrange on a baking sheet and bake until browned and almost tender, 10 minutes, turning once. Mix cottage cheese and 1 cup of mozerella in a bowl. Spread some meat sauce mixture at the bottom of an oven proof dish or pan with a lid. When the eggplant is browned place a layer of eggplant on the sauce, then meat mixture, then all of the cottage cheese / mozzarella mixture, a second layer of eggplant, then remaining meat sauce mixture, and finish with a cup of mozzarella mixed with Parmesan cheese. Cover and bake At 350 degrees for approximately 1 hour. Let stand before serving.
