Introduction

Number of Servings: 18

Ingredients

    1 can chickpeas, drained and rinsed
    Ĺ cup peanut butter
    ľ cup honey
    ľ cup mashed banana
    1 teaspoon vanilla extract
    1 teaspoon of cinnamon
    1.5 cups of oats
    1 cup whole wheat flour
    1/4 cup peanuts + 1/4 cup mixed nuts + Ĺ cup chocolate chips

    (original recipe calls for brown rice flour and pretzels instead of nuts but this is what i had on hand and used for the nutrional data)

Directions

In a food processor, combine beans, pb, honey, banana, vanilla extract and cinnamon until smooth. Add the oats and flour and pulse just to combine. Add nuts and chocolate and pulse again just to combine. If the consistency seems spreadable, youíre good. If itís too dry, add 1/4 cup of water; if itís too runny, add an additional 1/4 cup of the flour .

2. Spread mixture into a greased 9◊13 pan. Bake at 350 degrees for 15 to 18 minutes.

3. Remove from oven and let cool before slicing into 18 bars. Can be stored on the counter for several days or refrigerated up to one week.

Serving Size: makes 18 3*2.5 inch bars
