Roasted Veggies

Ingredients

    3 Small Red Potatoes, cubed
    1 med. green pepper, diced
    2 c cubed butternut squash
    1 Med. Vidallia Onion, chunked
    2 Small Zucchini, chopped
    2 Large Carrots, peeled and jullienned
    4 cloves garlic, minced
    4 Tbsp Shredded Parmesan cheese

Tips

Wonderful wrapped in foil and placed on the grill too.

Directions

Preheat oven to 400 degrees. Spray a jelly roll pan. Prepare all veggies as listed. Mix veggies together and place on pan. Bake 45 minuted or until tender. Sprinkle with the parmesan and serve!
