Homemade Grilled Stuffed Burrito

Introduction

Like Taco Bell's, only with far less sodium, less fat, fewer carbs (no rice), plus a whole wheat tortilla, this is a much healthier version. This is a single serving recipe, but you can make the more meat and beans and then save then in the freezer until next time!) Ingredients

    1 uncooked whole wheat torilla
    1/4 cup lean ground beef, browned and dreained (I make 1/2 lb and save the rest for next time)
    1 TBS shredded cheese
    1 TBS fresh cilantro leaves
    2 TBS homemade refried beans (made from green chilis and pinto beans + salt and cumin. See recipe.)
    1 TBS corn and black bean salsa


Tips

I highly recommend uncooked tortillas. They're found in the pre-packaged deli or the dairy case by the cheese. (Costco carries them too). Warm them in the microwave 10 seconds before cooking--they stay softer after cooking that way. They're way yummier than the pre-made tortillas!


Directions

On a flat griddle or large square frying pan, cook the tortilla on both sides until barely done. Set aside. In a frying pan, brown meat with some taco seasoning and drain.. In a small saucepan, heat up a can of pinto beans, half drained + 1/2 tiny can of green chilis. Add 1 tsp salt and 1 tsp cumin. Warm until bubbling then use a stick blender to blend until smooth. Add 2 TBs beans to the center of the tortilla. Add meat, salsa, cheese and cilantro. Roll tight, burrito style, and hold shut with a toothpick. Then grill on each side of the burrito (you'll have to move the toothpick for the 2nd side) until lightly browned.

Serving Size: Makes 1 large burrito (with leftover meat and beans)
