Asparagus Soup

Introduction

Light and creamy, delicious fresh vegan soup. Light and creamy, delicious fresh vegan soup.
Number of Servings: 8

Ingredients

    3 C. fresh asparagus (approx. 2 lbs.)
    3 T. Grapeseed Oil
    1 med. yellow onion, chopped
    2 lge. stalks celery, chopped
    2 lge. carrots, chopped
    2 T. Victoria Taylor's No Salt Lemon Pepper
    4 C. organic vegetable broth
    1 C. Coconut Milk
    2 lge. Scallions or green onions, chopped


Tips

Prep and measure all ingredients ahead of time.
Do not boil it or you'll spoil it's fresh, nutritious benefits.
For a "vegetarian" twist; sprinkle on a little grated asiago cheese!


Directions

1. Snap off and dispose of woody ends from asparagus. Snap off and reserve all the tips. Cut remaining stalks into 1/2" pieces.
2. In large saucepan, heat grapeseed oil over medium heat. Add yellow onion, celery and carrot; cook 3 - 5 minutes.
3. Add asparagus and seasoning; stir & cook another 3 - 5 minutes. Add vegetable broth; bring to gentle boil or simmer. Cover, stir occasionally and simmer 20 mins.
4. Puree soup blender; 1 or 2 cups at a time.
5. Return to saucepan over low - medium heat; stir in coconut milk until warmed through.
6. Add scallions and asparagus tips; reserving some for garnish.

Serving Size: 8 - 1 cup servings
