Health Nut Protein Energy Bars

Introduction

This time I tried incorporating some protein powder and flax into the equation to give them an extra nutritional boost. This time I tried incorporating some protein powder and flax into the equation to give them an extra nutritional boost.
Number of Servings: 8

Ingredients

    1/2 cup sunflower seeds
    1/4 cup flax (ground)
    1/2 dried apricots
    4 medjool dates, chopped and pitted
    1/2 cup almonds
    3 tbsp. soy protein powder

Tips

This one ended up a little crumbly, so it might be better with an extra date, or more apricot.


Directions

Put all ingredients into food processor and process until the nuts are fairly finely ground and the mixture forms a ball when pressed together. Press into a parchment-lined loaf pan and let set for 5 minutes. Remove from loaf pan and cut into 8 pieces. Enjoy.
