Slow Cooker Paleo South of the Border Beef Stew

Ingredients

    1 yellow onion, diced
    3 garlic cloves
    2 cups strained tomatoes
    1/2 cup beef broth
    2 tbsp chili powder
    1 tbsp ground cumin
    1 tbsp parsley
    1/2 tsp cayenne pepper
    Sea salt to taste
    4lbs beef stew meat
    Flax Seed Meal to thicken if desired

Directions

1. In a food processor, add the onion, garlic, strained tomatoes, beef broth, and spices. Blend until smooth.

2. Place the stew meat in the slow cooker, and add the sauce. Mix well.

3. Cover, and cook on low for six to eight hours.

Serving Size: Makes approx 5 Dinner-Sized Servings
