Vegetable Medley over Brown Rice

Ingredients

    1 med Zucchini - sliced
    1 med Yellow Crook Neck Squash - sliced
    1 med Red Onion cut in big pieces
    1 can 14.5 oz stewed tomatoes
    3 Tbls butter


Directions

slice the zucchini, yellow crook neck squash, and onion put in pot add stewed tomatoes (chop up tomatoes while cooking. Add butter and a little water simmer on medium heat to desired doneness.
Serve over brown rice. Its good with parmesean cheese on top.
