Number of Servings: 3

Ingredients

    12 oz ground turkey
    2 celery stalks, chopped
    1 onion, chopped
    2 cups low sodium broth (Pacific brand used)
    2 cloves garlic - mince
    Pepper, cayenne pepper, onion powder, garlic powder to taste

Tips

Can also crunch down 2-3 melba toasts and mix into meatballs if desired, but they don't need it! I imagine this would be AMAZING with fresh chopped basil or lemon, but I don't have either.


Directions

Preheat oven to 450

Heat a few teaspoons of vegetable broth in a large pan and sautee garlic.

Add chopped onion and celery to garlic, sautee. Add a few more teaspoons of more broth if needed to keep from sticking

As vegetables cook down mix spices into ground turkey -- garlic, pepper, onion powder, cayenne pepper, etc. Form into several balls. (Keep track of how many balls = 1 serving for HCG portions while raw)

When vegetables reach desired doneness, remove and add ground turkey to pan and brown

When turkey balls are browned transfer to cookie sheet and place in oven to bake

Add vegetables back to pan with vegetable broth and water. (recipe calculated with 2 cups broth, 1 cup water)

Bring to a boil, reduce heat and simmer while turkey balls cook

When turkey done, place 1 serving in the bottom of each bowl. Spoon vegetables and broth over. Add pepper if desired.
