corn chowder

Ingredients

    4 strips bacon, diced
    1 onion, diced
    2 ribs celery, diced
    4 potatoes, peeled and diced
    1 cup chicken broth
    2 15-oz. cans creamed corn
    2 12-oz. cans sweet corn, drained
    1 cup milk
    pepper to taste

Directions

place diced bacon in large nonstick Dutch oven or pot. cook until bacon is crisp; drain fat. add butter, then onion, celery, and potato. cook until onion is soft. add chicken broth and all corn; bring to simmer and bubbling around edges. turn heat down to low and cover. cook about 30 minutes or until potatoes are soft. add milk and pepper and cook another 5 minutes.

Serving Size: makes 6 2-cup servings
